Seeing as we are all trying to be good and watch our waistlines, save money we should start a thread on some good home cooked meals.

I bought a crock pot or slow cooker last month.
I bought this from Safeway for 30 bucks. Cheap.

It's awesome;
Gravy beef/ one kg
any veggies
leggos
salt/pepper
tabasco
bay leaf
one or two cups of red wine, the cheap stuff. And Dean Martin playing in the background.

Turn it on in the morning, come home at night and the meal is ready.

A glass of Sammy Adams ale, a slice of sour dour, some friends...woohoo!

for chicken i make a marinade form olive oil,mustard, curry powder and honey.

dice your chicken up, mix it through marinade let it sit in the fridge for a few hours.

cook in oven on medium heat until golden brown (you may have to take the lid off for the last 15min for it to brown up)

cooks some basmati rice, mix through a cup of frozen vegies (already cooked of course)

and there you go.

also for chicken breast, if they dry out too much here is what i do.

i cook mine in the george foreman, so i line it with foil, give it a quick spray with olive oil and cook them.

meat comes out tender and moist.

also if you cook extras for the next day, always cover it with glad wrap before putting it in the fridge, stops it from drying out.

turkey patties.

500g turkey mince
2 egg whites
fresh spring onion chopped
herbs of your choice
grated carrot
grated zucchini.
(note if the egg whites dont combine them well enough use a bit of water or bread crumbs if you wish)

combine all ingredients in a bowl mix with your hands, roll into postion sizes of your desire, flatten and cook.

usually cook mine on the bbq plate, sprayed with olive oil.

Some good recipes here, I'll add some more tonight. Another essential item is a wok. Throw in some meat, veg add a sauce, stir it up for 5-10min on high and it's done.

Sweet potato pancake

4 egg whites
2 heaped tbsp cold mashed sweet potato
curry powder

Beat egg whites  til they form stiff peaks, add in mashed sweet potato and curry powder (I usually add in like 3 tsp cos I like it, lol), whip it up, pour in a heated non stick fry pan. Wait til you see bubbles popping and you can get an egg flip underneath it without it breaking, flip, wait a minute or two, then serve. Its goes all bubbly in ya mouth, its cool

Indian dry chicken curry

onion, chopped
cummin
garlic
fresh ginger(grated)
1 tsp garam masala
1tsp ground tumeric
1tsp chilli powder
Chopped skinned chicken breast
1/2 cup water or chicken stock

Spray big saucepan with oil spray, cook onions til brown. Add spices and stir. Add chicken and stir to coat in spices. Add water and simmer covered for 30mins
then boil uncovered for 15mins or til liquid has evaporated

*drool*
Mini-taur. Rarrrrrrr

Handful chopped fresh parsley, garlic, chili (dryed) saut'e in oil for 1min

add 2 cans of crushed tomato and cover for 5min

add 1 tbsp olives, anchovies,  1/2 tbsp capers and simmer for 5 mins.
Add your fave pasta.

Open some cianti.

Bon appetite.

Poor/lazy mans rissoto
Discovered this once i had run out of anything better to eat (It makes alot!)

3 crushed cloves of garlic
1 diced onion
1 can chicken soup
1 can skinned tomatos
2 large cans of tuna (or more if you like)
Mixed diced vege's:
Carrot
Potato (Some may or may not like this, gives the dish a different texture. I'd probably leave it out first time round)
Sweet potato
Pumpkin
Challots
Chilli (Use the bottled chilli)
Red and green capsicum
The quantities of your vege's is up to you, as i usually make this when i've run out of most of my food and havn't gone grocery shopping it's usually whatever is left goes in.
Cup of rice

Start by chopping up all your vege's nice and small and get them in some boiling water to soften them up. And boil your rice.

In your *large* wok caramelise your garlic and onion
Add tomato (with juice)
Shortly after add chicken soup, tuna and a few teaspoons of chilli
Stir it all up, don't break up the tomato's they'll fall apart with the heat
Drain your vege's and add to the wok.
Stir it all in then drain and add your rice.
Add chilli powder and cracked pepper (I'm not a salt fan, so add as much to your liking)
Let it simmer for a bit then serve hot, add some more pepper to whats in your bowl.

Overall it's a pretty healthy dish, looks bloody terrible in colour when you start but trust me ends up looking and tasting great in the end :)

Btw the chilli is essential!  ;D
