Skeletropa first thing to do is workout exactly how many calories you are eating because more times than not those who have a "high metabolism" don't eat enough, their perception of food isn't what they think (as with overweight people).
There are way to bump up calories with dense foods like peanut butter, macadamia oil, coconut oil  but until you know exactly how much your eating your really just guessing how much food you need.
Insanity is defined as repeating the same behavior and expecting different results.

In saying this, how do you remember the calories for everything you eat.., do ya constantly do this each day..

I've seen sites which have hundreds and hundreds of foods and meals with calories, but it's very time consuming, specially when ya have something different, if you can recommend a good site that I can go to I'll check it out, I really do need to learn this as Protein is just a supplement, I know I need to eat more, Any suggestions.

Atm, I'm using Musashi Bulk, Moving to Redbak Mass XXXL when I return from R&R.

If you are really serious about this, record it daily. You will soon develope a list of frequently eaten meals so it becomes easy to record daily calories, and then you just spend a little time working out the not so frequently eaten foods. It comes down to how badly do you want to do it? Wasting 30 mins on a crappy TV show is more time than I would take you to help you with your body recomposition.

a bit more like mega and dan said plus just by looking at that i would say your breakfast needs protein added to it (either eggs or mix protein powder into your porridge)

also, counting calories in your head becomes second nature once you get used to doing it. I dont count them myself but i kind of know what's enough after so many years of doing it

I only ever count calories when trying to lose fat - I have no problem increasing calories  :)

Hey Skelltropea - you sure don't eat much for breakfast. I need 100g chicken or roo and 2 eggs(5am) and then again at 830am my first chicken breast gets consumed. At 1030 is tuna and at 100pm is brown rice based salad with chicken breast, with apples thru the day.

But then i have a jog pre-coffee in the morning just after waking.- I take it you don't cardio first thing?

Nah, I do Night-shift, so When i Come home from work I go to the gym, I know I need to eat more, and am in the rhythm at the moment of getting there, i need a bigger appetite, different on night-shift, I am also trying to work out whether splits of Monday, Wednesday and Friday would be more suited say chest and biceps one day, then legs and shoulders the next then back and triceps the next and the rest and in between cardio or days off, OR do Monday chest, Tuesday legs, Wednesday shoulders, Thursday biceps, Friday shoulders and Saturday triceps, or mixed up, but 6 days straight like that so i can concentrate on the one area per days, what do you guys think ?

night shift makes it hard...

what worked for me at the beginning was a 4 day split.

Chest & Triceps (abs)

Back & Bi's (calves)

Day off

Shoulders & Legs (abs)

Arms (calves)

Two days off

Start again

If you are not eating enough...I wouldnt worry too much about cardio at this stage IMO

They certainly give you lots of eating breaks during nightshift - which is great.

Looks pretty good - I'd have more carbs pre training though (if possible) like a bowl of rolled oats or something?
DanOZ would be a better person to give advice though - as he works nights as well.
